Ingredients

  • 2 eggs
  • 50 g baby spinach
  • 70 g mushrooms, diced
  • 1 spring onion, sliced
  • 20 g grated cheese

Method

  1. Soften the mushrooms and spring onion in a dry pan for 4 minutes.
  2. Wilt in the spinach, then divide the vegetables between three muffin cups.
  3. Beat the eggs with cheese, pour over the vegetables and bake at 180°C for 15 minutes.
