Ingredients

  • 180 g frozen peas
  • 80 g baby spinach
  • 1 small potato, diced
  • ½ onion, chopped
  • 400 ml vegetable stock and mint

Method

  1. Soften the onion for 4 minutes, then add potato and stock.
  2. Simmer for 12 minutes, add peas and spinach and cook for 4 more minutes.
  3. Blend with the mint until smooth and season with black pepper.
