Ingredients
- 180 g frozen peas
- 80 g baby spinach
- 1 small potato, diced
- ½ onion, chopped
- 400 ml vegetable stock and mint
Method
- Soften the onion for 4 minutes, then add potato and stock.
- Simmer for 12 minutes, add peas and spinach and cook for 4 more minutes.
- Blend with the mint until smooth and season with black pepper.
