Ingredients

  • 150 g firm tofu, cubed
  • 70 g whole-wheat noodles
  • 120 g broccoli florets
  • ½ red pepper, sliced
  • 1 tbsp peanut butter, soy sauce and ½ lime

Method

  1. Boil the noodles and add broccoli for the last 3 minutes.
  2. Sear tofu and pepper for 7 minutes until the tofu is golden.
  3. Whisk peanut butter with soy, lime and warm water, then toss with noodles, tofu and vegetables.
